How can you ensure that Eevee will evolve into an Espeon? I know it involves getting it happy/tame during the day time, but how do you make sure that it only happens during the day? Just not train it at night?

Can't you cancel the Evolution?

Well yeah the only real way to guarantee it will ONLY evolve, without cancellation, into Espeon, is to only train it during the day.

I think, if you give Eevee an Everstone during the night, it won't evolve. Take back the Everstone during the day, and if it doesn't evolve before 6 PM, give it the Everstone again until tomorrow.

Also, it wont evolve untill you beat the elite four.

Yea, once you defeat the E4 you get the National Dex, which is for all 386 Pokemon, and lets Eevee evolve to Espeon/Umbreon, Golbat into Crobat and so on.
