For example if a Pokemon has 300 Defence and 250 Special Defence you want more EVs in Special Defence than Defence. The only time you go different is for Tanks where you want huge Defence (Steelix) or Special Defence (Blissey). Since you were asking for general defence experiment until they're about equal unless you want the easy 252/129/129 EV way out.
