I'm guessing the writers wanted to treat the Pokemon more like characters, and it's hard to get attached to the Pokemon when there's so many.
Remember during the first few episodes? Where Ash was all "I'm going to be the greatest Pokemon master ever!" and how he was going to catch all 150 Pokemon? Well its been like 14 years and hes only caught less than 30 different kinds of Pokemon and a few of them were given to him. When he usually sees a wild Pokemon he observes it, maybe checks his pokedex, and thats it. He leaves it alone and often helps wild pokemon get back to another part of the territory. Or releases them.
What happened to that desire to catch all the Pokemon? What happened to that desire to be the very best, that no one ever was?

Well perhaps Gary Oak had like 100 Caterpies then. You remember the episode where he already had more than 151 Pokemon, and he said he likes to catch more than one a kind.
I think the writers only have him catch so few so the ones he does catch get more screen time. If he caught them all you'd see each of them once every blue moon.
If I were Ash I probably wouldn't catch too many Pokémon either, I'd much rather know them being free than in those silly Pokéballs all the time. I'd just take along a few and take care of those really well, rather than having a bunch and never seeing them.

Because he only likes Pikachu because it was his first pokemon than goes around trying to collect new pokemon each season but only gets the common flying type one, a fire type, grass, water, and sometimes a normal type, idt he's ever gotten a physic type before
No, no he hasen't had a psychic type before. Technicly, he hasen't had a ghost either since he never actually caught Haunter, getting rid of him only after making Sabrina laugh.
I remember the first few episodes where he freaking caught everything. Caterpie, Pidgeotto, Bulbasaur, Charmander, Squirtle, Krabby all were caught so close to each other.
