When you hatch a Level 5 Pokemon do you train up your EVs?

When you first hatch a Level Pokemon do you note down each EV it gets off a wild Pokemon so you put a lot of EVs into attack for a physical sweeper?

Can you please explain more of this to me thanks!

I usually use rare candies to train it up to level 50 to check its IVs (without saving of course). If I find them to be alright, then I reset and train it up properly. I usually keep track of EVs using the PP of attacks and once I max out EVs, I just candy up to level 100.

You should train to Level 100 without Rare Candys and do you note down what EVs you have in each Stat like 10 HP EVs/510 in total?
