starting over on sapphire

so I have to start a new game on sapphire version 'cuz I let my friend
barrow it so he could breed some of my pokemon and trade himself but he used a gameshark
and screwed up my game.
Just wondering if anyone's got any suggestions like for character names and which starter to go with.
or even better any kind of fun challenge I can take in the game.

You can do a monocolor team where you just pick Pokemon of one color.
You can play the entire game with only one Pokemon (not including HM slaves). Just pick a Pokemon that is a challenge to use like Beautifly or Pellipper, not things like Blaziken because they can easily sweep through the game.
Or even train a team of unevolved Pokemon, and keep them unevolved through the game.

Alright, so I decided to do the bug pokemon challenge.
right now I've got a the following team.

Lv.10 Beautifly
Lv.10 Dustox
Lv.12 Surskit

as for other bug poke's I do have them in my other games and I can breed for 'em
but I decided to gimme 'em as awards. So every time I get a new badge I'll trade one egg over
and everytime I add 20 entries into my pokedex I'll trade one over.

so far, I don't have any badges, it's taken a long time to raise those bugs.
Surskit in particular and i'm still trying to catch a female so I can have a pair.
for breeding later. I'm gonna raise 'em to Lv.20 before I take on the 1st gym or I'll get whooped.
