Don´t worry about it........
But i already tried with nincada but it evolves at level 20, and ninjask learns swords dance at level 25; do i have to give nincada a everstone to stop its evolution and that way it could learn false swipe????

You have to catch the obtainable 200 first...

Um....you can press "B" when a pokemon starts evolving to stop it from evolving. It will try to evolve again every time it gains a level. I thought everybody knew that...you've ALWAYS been able to.

There's also a GS code that unlocks the National PokeDex. I don't know what it is off-hand, though. Look around on GameFAQs for it. There's also a code that turns off the National PokeDex, although I personally find that code useless.

Look around for the code to unlock the National Dex, you'll be able to see their pokedex entries then.
