    If my poekmon has the Poke virus, and I take out a Machop, do I wind up with 4 EVs?

    Yup, Macho brace stacks with Pokerus, so if you KO a pokemon that normally gives you 3 EVs, you get 12 with Macho Brace + Pokerus.
